Bean Sprouts Salad with Garlic Soy Sauce

Ingredients

125g fresh soy bean sprouts
125g fresh mung bean sprouts

Sauce

2-3 cloves garlic, finely minced
2 fresh spring onions, finely chopped
2 tb sp soy sauce
1 tb sp sesame oil
1 tsp sugar
1/2 tsp salt
1/2 tsp black pepper
1 tsp vinegar

Method

Wash and rinse the two kinds of bean sprouts.

Mix together all the sauce ingredients and set aside.

Bring a large pot of water to a rolling boil and add 1 tsp salt.

Add the soy ben sprouts to the boiling water and blanch for about 2 minutes. Remove with slotted spoon and let drain in a colander.

Add the mung beans sprouts to the boiling water and blanch for about 20 seconds. Remove and drain.

Mix the two kind of sprouts together in a bowl, then add the sauce and toss well.

Transfer immediately to a serving dish.
