Spinach with Garlic

Ingredients

350g fresh spinach, stems removed
3 tb sp oil
1 tsp salt
6-8 cloves garlic, coarsely chopped

Method

Wash and rinse the spinach well, then place in a colander to drain.

Heat oil in a wok over high heat and add 2/3 tsp of the salt to hot oil.

Toss in the chopped garlic, then the spinach and turn carefully with a spatula to coat all the leaves with oil. Stir-fry for about 1 minute or until all the leaves are wilted and have turned dark green.

Transfer immediately to a serving dish.
