Pumpkin Braised
Ingredients
3 tb sp vegetable oil
1 kg fresh pumpkin, peeled, seeded and cut into 3.5cm chunks
1 tb sp sugar
1 tsp salt
125ml water
Method
Heat oil in a large stew pot or deep wok.
Add the pumpkin and stir-fry slowly, until all the pumpkin is coated with oil and begins to soften.
Add sugar, salt and water, cover pot with a lid and lower heat. Simmer for about 20 minutes or until tender, stirring occasionally to prevent sticking.
This vegetable dish is one that most children like. You may like to experiment with different flavors, such as adding cinnamon sticks, a sliced vanilla bean.
Finnish the dish with some chopped spring onions.
