Rice Braised with Mixed Vegetables

Ingredients

10 dried shiitake mushrooms
3 tb sp vegetable oil
1 large or 2 medium onions, sliced into crescents
3-4 cloves garlic, finely chopped
3-4 slices ginger, finely chopped
2 large or 3 medium carrots, dices
12 florets of broccoli, stems peeled
1 large green capsicum, diced
1 cup green peas, fresh or frozen
550g cooked rice, white or brown
125ml mushroom soaking water

Sauce

1 tb sp soy sauce
1 tsp wine
1/2 tsp sugar
1 tsp salt
1 tsp sesame oil

Method

Soak the shiitake for at least 15 minutes in warm water, drain and reserve 125ml of the liquid. Squeeze excess moisture from the mushrooms and slice each one into 4-6 strips.

Combine all the sauce ingredients and set aside.

Heat oil in a wok and saute the shiitake, onions, garlic and ginger together for 1 minute. Add the sauce mixture the carrots, broccoli, green peppers and peas. Cook for 4-5 minutes.

Add rice and continue to cook until all ingredients are well mixed, then add the mushroom water and mix through until well combined.

Lower heat, cover with a lid and braise for 3-4 minutes, then transfer to a serving platter.
