Fried Rice Home Style

Ingredients

Assorted left over's (except leafy greens)
60ml vegetable oil
550-750 cooked, white or brown rice
4-5 spring onions, finely chopped
1 tsp salt
1 tsp black pepper

Method

Place all left over's vegetables and tofu together in a bowl and drain off and excess sauce, retaining about 90ml.

Heat oil in a wok and when hot add the vegetables and stir-fry quickly for about 1 minute.

Add the rice and continue to stir-fry until rice and vegetables are well mixed.

Sprinkle on the spring onions, salt and pepper and continue to stir-fry and turn for another 1 to 2 minutes. Transfer to a serving dish or to individual rice bowls.

Note: Cooked rice should be dry and firm when preparing this dish. If you have left over meats such as chili chicken or stir-fried fish, they may be added.
