Lotus Root with Spring Onions
Ingredients
2 whole fresh lotus roots
1 tsp oil
6 spring onions, cut into 1 cm pieces
1 tsp salt
125 ml water
1 tb sp toasted sesame seeds
Method
Wash the lotus roots well, slice them crosswise into round pieces about 1/2 cm thick.
Heat oil in a wok and when hot , saute the sliced lotus and spring onions together
with salt for 2 to 3 minutes.
Stir in the water then cover with a lid and lower heat to medium, simmer for 5 minutes. Transfer to a serving dish and garnish with toasted sesame seeds.
Serve as an appetizer before the main meal.
