Poached Tofu with Spicy Sauce

Ingredients

2 lt (8cups)water
1 tofu cake
3 cloves garlic, chopped
3 slices ginger, finely chopped
3 spring onions, finely chopped
1 sprig fresh coriander

Sauce

1tbsp sesame oil
6 cloves garlic
1 tb sp chili oil
1 tb sp soy sauce
1 tsp black pepper
1/2 tsp salt
1 tsp sugar

Method

Bring a large pot of water to the full boil carefully add the tofu cake, reduce the heat and poach for 4 minutes. remove with a slotted spoon and drain. Alternatively, place the tofu in a steamer and steam for 4 minutes.

Mix all the sauce ingredients well and set aside.

Place the garlic, ginger and spring onions in a bowl. Pour the sauce into the garlic, ginger and onion and blend well. Place the tofu in the center of a small serving dish. Make 4 cuts across the top of the tofu in both directions, cutting no more than
half way deep. Drizzle the sauce evenly over the tofu and serve as an appraiser.
