Golden Lily, Bamboo Pith and Wolfberry Soup

Ingredients

800 mls vegetarian soup stock or plain water
1/2 tsp salt
1 Tbsp Chinese wolfberry
50g dried tiger lily buds (golden needles) tough base remove,
soak 20 minutes then drain
6 pieces blackwood ear fungus, cut into finger-thick strips
8 pieces dried bamboo pith, soaked in cool water for 20 minutes
and snipped into 4 cm lengths



Method

Bring the stock or water to the boilwith salt, then add the wolfberry and let water return to the boil. Add the flowers, wood ears and pith. bring soup to full boil, cover lower heat and simmer for 3 minutes.Taste and adjust seasoning , then transfer to soup tureen and serve.
