Millet and Brown Rice Congee

Ingredients

240g brown rice
4 lts water
120 g millet
1 tsp salt
Seasoning (optional)
1 tsp sesame oil
1/2 tsp black pepper
1/2 tsp salt
2 tb sp chopped spring onions

Method

Wash and rinse the rice well, then place in a large pot and add 4 lts water. Leave to soak for 3-5 hours or overnight.

Bring the water and rice to a rolling boil, then all the millet and the salt. When water returns to full boil, reduce heat to a medium low, cover partially with lid to allow steam to escape and simmer for 1 -1.5 hours, stirring occasionally to prevent sticking, add water as needed if it gets too dry.

Turn off heat and leave covered on stove until ready to serve.

If using seasonings for a one dish meal, add them to each serving bowl and spoon congee on top and stir to blend the flavors.
