Eggs Scrambled with tomato and Onion

Ingredients

6 eggs
1 tsp salt
1 tsp black pepper
1 tsp sugar
1 tsp soy sauce
1 large onion
3 medium tomatoes
3 tb sp vegetable oil


Method

In a large bowl, beat the eggs well, then add the salt, pepper, sugar, soy sauce and onion. Continue beating until well blended.

Cut each tomato in half, then cut each half into four to yield 24 pieces.

Heat the oil in a wok and when hot add the beaten eggs. Scramble the egg mixture quickly with a spatula for 1 -2 minutes, then add the tomatoes and continue to stir-fry until eggs are uniformly cooked and dry. Transfer to a serving dish.
