Chicken Chunks with Chili
Ingredients
450g boneless chicken breast, skinned and cut into 2.5 cm chunks
6 red chili peppers
3 tb sp vegetable oil
1-2 tb sp chili paste
6-8 spring onions, chopped
Marinade
2 tb sp wine
1 tb sp soy sauce
1 tb sp sugar
1 tsp sesame oil
1 tsp corn starch
6-8 cloves garlic, finely chopped
6-8 slices ginger, finely chopped
Sauce
2 tb sp wine
1 tsp soy sauce
1 tb sp water
1 tsp salt
1 tsp sesame oil
Method
Place the chicken chunks in a bowl, then pour the marinade over the chicken, coating the pieces well. Sprinkle the chopped garlic and ginger on top and leave aside to marinate.
Cut the chilies lengthways and scrape away the seeds and white fibers, retaining only the shells.
Heat oil in a wok over high heat and add the sliced chilies. When the chilies are scorched and smoking, add the marinated chicken and quickly stir-fry for 2 minutes. Then add the chili paste to taste and continue to cook for another 1 minute.
Stir in the Sauce over low heat, cover wok with a lid and simmer for 2-3 minutes. remove from heat, add spring onions and transfer to a serving dish.
