Fish Stir-Fried with Black Bean Sauce

Ingredients

600g fresh fish steaks or fillets, cut about 1.5 cm thick
6 spring onions, cut into 2.5 cm lengths
3 tb sp vegetable oil
3-4 cloves garlic, finely chopped
1-2 tb sp black bean sauce, to taste
1 tsp sugar
black pepper, coarsely ground to taste

Marinade

2 tb sp wine
1 tsp sesame oil
1 tb sp grated ginger

Method

Cut the fish into 3 cm chunks. Place in glass or ceramic bowl, mix the marinade, then add the marinade to the fish and turn to cover the fish evenly. Cover with a plate or clear wrap and set aside to marinate for about 30 minutes.

Heat the oil in a wok and when hot, add the marinated fish and garlic. Stir-fry gently for 1-2 minutes until fish changes color, then add the black bean Paste and continue to cook for another 1-2 minutes.

Add the spring onions, sugar and black pepper, stirring for 1 more minute to blend the flavors. Transfer to serving dish.
