Fish Steak with Red Braise

Ingredients

600g fresh fish steakes or fillets, cut about 1.5 sm thick
salt and pepper
6 spring onions, cut into 2.5 cm lengths

Sauce

1 tb sp soy sauce
1 tb sp wine
1 tsp sesame oil
1 tsp sugar
1 tsp sesame oil
1/2 tsp vinegar
1 tb sp grated ginger

Method

Pat the fish dry with paper towels, then sprinkle both sides with salt and pepper.

Heat a skillet or shallow wok and rub the entire inside surface with a piece of fresh ginger (this helps prevent sticking).

Add oil and heat over a medium heat.

Place the steaks or fillets in the pan and fry for 2 minutes on each side. Gently shake the pan to help prevent sticking.

Mix the sauce ingredients and pour over the fish.
