Sweet Red Date, Lotus Seed and White Fungus
Ingredients
30 dried white lotus seeds, soaked in cool water overnight
12 Chinese red dates, washed and pits removed
3 whole florets white fungus, soaked in cool water for one hour
1+1/2 lts water
75g rock crystal sugar
Method
Drain the lotus seeds and place in a large pot together with the red dates, white fungus and water.
Bring to a full boil, then sweeten with the rock sugar. Cover , then lower heat to low and simmer for one hour.
Taste for sweetness and adjust if necessary. Transfer to a tureen or ladle into individual serving bowls.
